Head to a local farmers market or grocery store and pick up some in season produce for these scrumptious spring recipes.\u00a0<\/span><\/p>\n<p><\/p>\n<p><strong>RHUBARB CUSTARD BARS<\/strong><\/p>\n<p><span>Start to finish: 1 hour 15 minutes<\/span><\/p>\n<p><span>Yields: 3 dozen bars<\/span><\/p>\n<p><span>2 cups all-purpose flour<\/span><\/p>\n<p><span>\u00bc cup sugar<\/span><\/p>\n<p><span>1 cup cold butter<\/span><\/p>\n<p><span>FILLING<\/span><\/p>\n<p><span>2 cups sugar<\/span><\/p>\n<p><span>7 tablespoons all-purpose flour<\/span><\/p>\n<p><span>1 cup heavy whipping cream<\/span><\/p>\n<p><span>3 large eggs, room temperature, beaten<\/span><\/p>\n<p><span>5 cups finely chopped fresh or frozen rhubarb, thawed and drained<\/span><\/p>\n<p><span>TOPPING<\/span><\/p>\n<p><span>6 ounces cream cheese, softened<\/span><\/p>\n<p><span>\u00bd cup sugar<\/span><\/p>\n<p><span>\u00bd teaspoon vanilla extract<\/span><\/p>\n<p><span>1 cup heavy whipping cream, whipped<\/span><\/p>\n<p><span>In a bowl, combine the flour and sugar, and cut in the butter until the mixture resembles coarse crumbs. Press into a greased 13-by-9-inch baking pan. Bake at 350 \u00baF for 10 minutes.<\/span><\/p>\n<p><span>For filling, combine sugar and flour in a bowl. Whisk in cream and eggs, then stir in rhubarb. Pour over the crust, and bake at 350 \u00baF until custard is set \u2014 about 40 to 45 minutes. Let cool.<\/span><\/p>\n<p><span>For the topping, beat cream cheese, sugar and vanilla until smooth; fold in whipped cream. Combine citrus supremes, arugula and mint in a large salad bowl.\u00a0<\/span><\/p>\n<p><span>Squeeze the juice from the citrus membranes into a large measuring cup or jar. Add the extra virgin olive oil, honey, vanilla extract and salt, then whisk to combine. Drizzle half the dressing over the citrus salad, then toss to combine.
